1/2 cup cheddar cheese
1/4 cup mild salsa
2 tsp. milk
hot pepper sauce
Combine cream cheese and cheddar cheese in small pan. Stir in salsa and milk. Heat nicely. Transfer dip to small bowl, put in some hot pepper and eat with nacho chips!

EASY HOMEMADE SALSA
1 –14.5 ounce can diced tomatoes, drained
1 –10 ounce can diced tomatoes with green chiles, drained

- 3 cloves garlic
- 1/2 onion
- 1 jalapeño deseeded and membranes removed ( chile serrano if you like it hotter!)
- 1/2 tablespoon honey
- 1/2 cup cilantro
- 1/4 teaspoon salt
- Juice from 1/2 lime
- Roughly chop up 1/2 an onion, 1 jalapeno (remove seeds as desired; the seeds will add heat), and 3 cloves of garlic. Add to food processor.
- Add in 1 can of diced tomatoes and 1 can of diced tomatoes with green chiles.
- Add in honey, salt, 1/2 cup cilantro leaves, and juice of 1/2 lime (start slow with the lime as it can overpower; you can taste and add more if desired)
- Blend in food processor for about 30 seconds or until desired consistency. Play around with draining tomatoes or not depending on your taste!

Tortilla española - Spanish egg and potato omlette

Churros (Basically, a cinnamon/sugar doughnut)
1 tube of canned biscuits (I use Reduced Fat Pillsbury but choose whatever brand you like.)
canola or vegetable oil
cinnamon
sugar
large frying pan (I actually use an electric wok J.)
paper towels
brown paper lunch sacks
tongs
Cut biscuits in half. Roll into long skinny ropes.
Use enough oil so that the dough will float. Turn frequently during cooking to ensure even cooking without burning. The churros should be a light to a medium golden color when done. Place on paper towels to drain off excess oil. While still warm, place the churros in a bag with cinnamon and sugar mixed together. Give the bag a couple of good shakes to coat them with the cinnamon and sugar.
Yields 16 churros. Enjoy while warm! Or you can go to Costco! ;)
Very Basic Guacamole and Chips (although your children have bragged about your homemade recipes, as well!)
2 ripe avocados, diced or mashed to a creamy consistency
1/2 of a Roma Tomato, chopped
juice from half of a lime
1-2 tsp sour cream
1/3-1/2 packet taco seasoning (I use Meijer brand mild.)
Mix together and serve with tortilla chips.
Limonada tropical
You will need:
1 can frozen Lime-Aid concentrate (see can for instructions) I add a little less water than what they call for.
1/4-1/2 c. Daily's Non-Alcoholic Piña Colada mix
Mix together. Serve over ice with lime wedges.
Jarritos - Mexican Pop/Soda - available at Walmart, Meijer and Hispanic groceries

Meijer sells Abuelita and or Ibarra Mexican Hot chocolate disks. They are spiced chocolate tablets you melt in very hot milk.
You will need:
4 cups milk
1 (3.1-ounce) disc Mexican chocolate*
Sugar to taste
In a heavy sauce pot, over medium-high heat, bring the milk and chocolate to a boil. Reduce the heat to medium-low and simmer for 20 minutes, whisking constantly until the mixture is frothy and the chocolate has dissolved completely. Remove the pan from the heat and serve immediately.
Polvorones (Mexican Wedding cakes) NO NUTS PLEASE!
You will need:
1 cup butter or margarine
1/2 cup sifted powdered sugar
1 teaspoon vanilla
2 cups all-purpose flour
1/8 teaspoon salt
powdered sugar
Cream butter, the 1/2 cup powdered sugar and vanilla. Combine flour and salt. Stir into butter mixture. Shape dough into 1-inch balls. Place on ungreased sheet baking sheet. Bake in oven 325 degrees 20-25 minutes till lightly browned. Roll warm cookies in powdered sugar. Cool on wire racks, then roll again in powdered sugar. Makes 36.

16 ounces of refried beans
8 ounces of cream cheese, softened
1 cup of sour cream
1 cup shredded cheddar cheese
2 tablespoons of taco seasoning
2 to 3 cloves of minced garlic
1 cup Raspberry salsa (Mrs. Renfro’s) found at Meijer
1 Rotisserie chicken shredded or diced
Mix refried beans, cream cheese, sour cream, shredded cheese, taco seasoning, garlic, and Raspberry salsa until well blended. Microwave to help soften for easier blending. Add rotisserie chicken. Microwave to help for easier blending. Put in crockpot to serve warm. Serve with tortilla chips.
